Gazpacho
The spanish classic: refreshing, cool vegetable soup
The famous, spanish Gazpacho is just perfect for hot summers days, when a cool refreshment is needed. According to our motto "Mundfeuerwerk statt Zuckerflash" ("mouth firework instead of sugar flash") this recipe is one of our favorites.
Step 1
Wash the vegetables and cut them into large pieces.
Step 2
Blend all ingredients. When pureed, the toast binds the liquid in the vegetables and creates a nice, creamy consistency.
Set the right seasoning by adding the Lioko Mexikaner: 5 shots gets the soup rather mild. Finally you add the oil.
When preparing larger quantities, you may have to puree in several steps.
Step 3
Let the soup chill in the fridge for at least an hour.
Ingredients
for 5-6 glasses
- 5 cherry tomatoes
- at least 5 shots Lioko Mexikaner Classic
- 1/2 onion
- 1/2 sweet pepper
- 3 garlic clove
- 3 tbs olive oil
- 2 slices of toast
- 7 tbs balsamico or vinegar
- 1/2 small can of sieved or peeled tomatoes
- 150 ml water
