Erfrischende Currysuppe
A simple, satisfying soup
As a starter or as a proper meal - thanks to the ingredients, this curry soup is not only filling, but also easy to make!
Step 1
First the curry paste has to be made. Put half an onion, garlic, half a bell pepper, and curry powder in a blender. Heat oil in a saucepan, then pour in the curry paste to sauté.
Step 2
Deglaze the paste with coconut milk and add tomato paste as well as Lioko Mexikaner. If you like it less spicy, we recommend Lioko Mexikaner Classic. Even 6 shots (12 cl) are still very mild. Those of you who are more heat-resistant take the same amount of Lioko Derbe Scharf.
Step 3
Add the other half of the sweet pepper, green onions and tofu. Bring everything to a boil and then simmer uncovered for 10 minutes. This allows the alcohol to evaporate while the vegetables are cooking.
Step 4
In the meantime, halve the cherry tomatoes and then put them in the pot. Now everything needs to stand for 7 minutes until the soup is ready to be served.

- 1 yellow sweet pepper
- 2 green onions
- 250 g cherry tomatoes
- 400 g coconut milk
- 2 shots Lioko Mexikaner Derbe Scharf or 6 shots Lioko Mexikaner Classic
- 1/2 onion
- 1 clove of garlic
- 2 tbs curry powder
- salt
- 3 tbs tomato paste
- tofu (not smoked)
